Penance (Unpasteurized Water Buffalo Cheddar by Monforte Dairy)

For a couple years, we dabbled in making unpasteurized cheddars. This is some of the last of it, and - as it turns out - a good note to end on. Almost like...we've done our penance? At a year old, it is milky and subtle with undertones of apple and a touch of acidity to match. In Ruth's words, it's "a well-constructed cheddar" that won't hit you over the head like the hyper-aged cheddars so common these days.

With only two batches left, we're reserving this cheese for wholesale customers so that you can expect to have it through 2026.

Penance is sold as 2kg blocks for $90 ($45/kg), though we can send you larger blocks if you prefer - simply order as many pieces as you like and we'll call to confirm format. Please note that blocks may vary in size, but we'll be sure to deliver within 100g or so.
