A soft cow's milk cheese, with an ash-coated, wrinkly rind made in the French style. It starts out delicate and creamy but will get funky and ooey-gooey as it gets closer to the BB date. 2nd Place Winner at the RAWF in 2025. Ingredients: Pasteurized Cow's Milk, Salt, Calcium Chloride, Rennet, Bacterial Cultures, Vegetable Ash.
