It is lovely. A favourite for years, we've stopped making it and have just a 100 wheels left to sell. At about 6-12 months old, these remaining batches are nutty and mild, but definitely not bland. A solid cheese and a great kitchen workhorse: grated on french onion soup, added to a mac and cheese blend, or a palette cleanser on a cheeseboard.\u003c\/p\u003e\u003cp\u003eA typical wheel is 5kg and priced at $250 ($50\/kg), but we'll sell by the half-wheel too.
